Ayurvedic Chai Tea

Ingredients

  • 1 ½ cups water

  • 2 tsp Freshly grated ginger

  • 1 tsp Fennel seeds

  • 7-9 Cardamom pods

  • 1 stick Cinnamon

  • 3 – 4 Cloves

  • 1 Star Anise (optional)

  • ¼ - ½ tsp Ajwain (use in winter or autumn, digestive)

  • 3 -4 seeds Coriander (use in summer, cooling)

  • 1 tsp Raw sugar, per person or to taste

  • 1 tsp Black tea, loose leaf or rooibos per person

  • 2 cups unhomogenised organic milk

Directions

  1. Add water and ginger to a small pot and place on medium-high heat.

  2. Place spices in a mortar & pestle and grind briefly.

  3. Add spice mix to water and bring to boil.

  4. Add sugar and bring back to boil.

  5. Add tea leaves and immediately add milk. Bring back to boil. It’s important to add milk straight after the tea, so that tannins from tea are not released. Tannins have a drying effect.

  6. Simmer for a minute and serve hot.

    Serves 2 (generously)
