Besan Protein Pancakes

  • Light easily digestible meal for heavy Kapha constitutions, water retention and a sluggish lymphatic system

  • Great for kids, especially when you want to boost their protein. Add fillings of your choice such as sauteed julienne carrot or avocado

  • Serves 4

Ingredients

1 heaped cup Besan (black gram) flour

1 Onion, finely chopped

1 tsp Ajwain seeds (available at Indian grocers)

1 tsp Cumin seeds

½ tsp Turmeric powder

Pinch Salt, as per taste

1-2 cups Water

Ghee or quality oil for cooking

Garnish: Fresh chopped coriander and lemon wedges. Chutney such as coriander mint chutney.

Directions

  1. In a large bowl mix flour, onion, ajwain, cumin seeds, turmeric and salt.

  2. Add water and mix well to make a batter ensuring no lumps of flour remain. It should be quite runny.

  3. Heat a cast-iron fry pan and drizzle on 1 teaspoon of ghee.

  4. Spoon 2-3 tablespoons of batter onto the pan and spread to make a pancake.

  5. Shallow fry for about a minute.

  6. Flip over and cook on the other side for about a minute. Spoon a little more ghee or oil around the sides of the pancake to make it crispy.

  7. Flip it one more time and cook for about 10 seconds.

  8. Serve hot with coriander, lemon wedges and chutney.
