Parsley Walnut Pesto
A perfect way to boost your consumption of this incredibly nutritious food.
Parsley benefits:
Alkaliser - Helps balances the acidity in the gut from chemicals, sugar, coffee etc.
Source of chlorophyll, iron, vitamins A, C, K, magnesium
Helps cleanse your system of synthetic chemicals from food additives, pesticides, chemical fertilisers, air pollutants etc.
Ingredients
2 cups Parsley, chopped
1 cup Walnuts* (or almonds, pepita seeds, sunflower seeds)
2-3 Garlic cloves, crushed
½ tsp Quality salt e.g. Himalayan, Celtic
Plenty of Australian olive oil, at least 2/3 cup
Directions
Blitz altogether and hey presto! Pesto is ready.
Add grated Parmesan cheese if you like the creaminess. Anyone with an excess of Kapha should avoid the heaviness and mucous producing quality of dairy products such as cheese.
NOTE
Bonus points for toasting the walnuts and/or seeds as they are lighter on digestion and have a slightly sweeter flavour.
